Ikan Pirang, the golden yellow fish, is often used to make umai.

1) To make umai,  one need to slice the fish into thin pieces. This is done so that the bones would not get stucked to at your teeth or worst, you THROAT!
2) Next step, add some lime juice. This is because the umai is not cooked so we need a little bit of acidity.  Add chillies, ginger, shallot and big onion and marinate for an hour.

GOOD TO KNOW

Every places has its own tradition. So does Mukah. This place have their own signature food which is umai, ulat mulong, sago and linut. Mukah is widely known for these scrumptious  traditional delicacies.
Ulat mulong, sago and linut all came from one source which is the balau tree. Amazing , isn’t it? How a tree can produce numerous products. Not only does it produces sago and linut, but there are other outputs that came from this tree, be it edible or in the form of furniture of other goods.

Meanwhile, the umai is popularly made of the pirang fish. Some people prefer using prawns, jellyfish and even chicken! But regardless of which ingredient you use, umai is always delicious. It tasted kinda like sushi,  we shall say. Just that umai is sour because of the lime juice. Oh did we forgot to mention, umai is not cooked it is served with lime juice and a bit of onions and chilly. Sounds yummy isn’t it? well, it certainly is!
